Produced by the Hernández family at Finca Los Nogales in Pitalito, Huila, Colombia, this Ethyl Acetate (EA) decaffeinated Typica variety is grown at elevations between 1,750 and 1,950 meters. The innovative decaffeination process involves fermenting the coffee's own mucilage to produce the EA solvent, which is then used during processing to gently remove caffeine while preserving the coffee's inherent flavors. This method allows the coffee to retain its complex profile, offering notes of raspberry, cinnamon, and milk candy, and was notably used by the 2024 U.S. Brewers Cup Champion, Weihong Zhang, challenging traditional perceptions of decaf coffee

Chocolatey deliciousness

This is my first decaf from Los Nogales, and like the previous beans I got from this producer, this was also exceptionally chocolatey. Think a nice dark chocolate with fruity notes. Simply delicious. On Hatch's website it tells you this coffee draws down faster than the usual bean and it is true. I had to grind way finer, but the speed helps me with uniform extraction.

With this coffee you can have your cake and drink it too (until it inevitably runs out). A stellar coffee (and it's decaf?!) with dessert-like sweetness that's reminiscent of cake. What kind of cake? Strawberry shortcake, raspberry cheesecake, cinnamon coffee cake... you name it.
