COF-MH-0187Produced by Ivan Solis at Finca Carrizal in Dota Tarrazú, Costa Rica, this Red Catuai variety underwent an innovative natural process with a unique fermentation stage. The cherries experienced an anaerobic fermentation with mossto at a ratio of 1 liter per 100kg of cherries for 72 hours, followed by drying on beds for approximately 22 days until reaching the desired humidity of 10%. This meticulous processing imparts a sweet and nostalgic flavor profile, reminiscent of Halloween candies, cola, and red licorice, showcasing the producer's commitment to experimental techniques and exceptional quality
