Known for its complex aromatics and low yield, this coffee undergoes a high-precision anaerobic thermal shock process. The cherries are treated with a 90°C thermal shock before a 96-hour anaerobic fermentation with Saccharomyces pastorianus yeast. The resulting cup is remarkably complex, offering vibrant layers of passion fruit and guava, a distinct citra hops brightness, and a sophisticated finish of green cardamom and rose.
