COF-MC-0011Jose Herman Salazar, a decorated producer who recently secured 6th place in the Colombia Cup of Excellence, presents this fascinating "Bourbon Aji" lot from his 6-hectare farm. While originally named for the spicy, red pepper-like aroma of its cherries, recent genetic testing has revealed this variety is actually a rare Ethiopian Landrace discovery rather than a true Bourbon. To preserve its unique genetic heritage, the coffee underwent a 48-hour fermentation in GrainPro bags followed by drying on African raised beds. The resulting cup is remarkably complex and Gesha-like, offering elegant aromatics of elderflower and bergamot, a dense simple-syrup sweetness, and a bright, tangy finish reminiscent of tamarind.
