Located in the northern Chalatenango Mountains, Finca Santa Rosa is renowned for its championship-caliber Pacamara variety, grown at 1,650 meters. This specific lot underwent a sophisticated anaerobic natural process, featuring 36 hours of limited-oxygen fermentation before being dried on raised beds for 20 days. Onyx meticulously roasts and extracts this coffee to lock in its delicate aromatics before transforming it into a specialty instant powder. The resulting cup is deeply sweet and floral, showcasing elegant notes of rose and white grape supported by a rich fig sweetness and a structured black tea finish
