Luis Roldan, an agricultural engineer and Indigenous Xinka leader, produces this Red Catuai at Finca El Durazno. A cornerstone of Rabbit Hole’s sourcing, this lot supports the Mataquescuintla resistance against illegal mining and promotes Indigenous sovereignty. Processed with an eco-pulper to minimize water usage in a drought-stricken region, the coffee offers a balanced, light-medium profile with festive fruit notes and a dense, chocolatey finish.
