We strongly believe you can enjoy an unopened bag of coffee 10 or more weeks past the roast date; however, we still aim to reduce pricing by 20% for any coffee once it is 6 weeks past roast.

Wilton Benitez’s Chiroso P-16 is a meticulously crafted coffee from Granja Paraíso 92, processed with a 62-hour anaerobic fermentation and thermal treatment for amplified sweetness. Grown at up to 2100 masl in Cauca, this natural lot delivers a lush and expressive profile of stone fruit, floral notes, and tea-like sweetness

perfect for cold brew

wiltion benitez anaerobic beans is always my top choice for cold brew

Interesting

I’ve brewed this one 3 times - each time the flavor profile has been different, but maybe just on the border of unpleasant/a swing and a miss. At “high” temp, just off the kettle, the coffee tastes like coffee. Perhaps maybe a bit unpleasant. The flavor profile changes as it cools down, and at the cooler temps, you really start to taste the notes - but who wants tasting notes at almost room temp coffee? Contrast this to Dak Macaron, where the notes are there from the get go, and it’s an entirely different drinking experience. I’ll keep messing with the brew settings for the rest of the bag, but this one is a swing and a miss for me.
