This Yellow Bourbon from Paraiso 92 in Piendamo, Cauca, Colombia, is produced by Wilton Benitez using a Double Anaerobic Thermal-Shock Washed process. Grown at 1900 masl, the coffee undergoes UV sterilization before an intense 96-hour fermentation in stainless steel tanks, resulting in a silky, buttery, and wildly aromatic profile. Merry Christmas to me

always fun processes coming out of Sorellina, and I'm never sure whether I'm in for a funk bomb or something a little more gentle. this one is smooth and silky and delicious!

The goods

Daaaaaaaang. This stuff is silky smooth perfection. Not quite as bold and strange as I thought it would be going in, but it's definitely different.

Kinda reminds me of cheesecake in the best way. Silky smooth, almost creamy with a faint lactic tang. A bit of jammy fruit and a wicked tasty, graham cracker like toasty-ness to it that brings it all together.

So good. Probably my favorite this year.
