Subtext - Adriana Franco: Wush Wush
COF-ST-0259Adriana Franco owns and operates Finca El Triunfo in the La Armenia district of Planadas, Tolima. Though not originally from a coffee-producing family, Adriana has spent recent years refining her production techniques alongside her family, resulting in a significant jump in cup quality for this season’s harvest. This lot features the rare Wush Wush variety, which shares its name with the Ethiopian region where it was first discovered and is known for its low yields but immense quality potential at high elevations. To produce this lot, the cherries were initially fermented for 24–36 hours before being depulped and placed in sealed plastic barrels for a cool, controlled fermentation of 36–48 hours at Jorge Rojas’s processing plant, La Central. The resulting cup is exceptionally clean and bright, showcasing elegant notes of white grape and jasmine with a juicy, sweet pear finish.
