Grown without synthetic inputs, this lot undergoes a meticulous washed process, including an initial fermentation in plastic bags followed by de-pulping and additional fermentation. The result is a vibrant cup with bright, prickly acidity, reflecting both the unique qualities of the Pink Bourbon variety and the care Alirio and his collective, Los Guacharos, invest in their craft.
