COF-3M-0022This washed coffee is produced at Finca Rosma in Palmira, Huehuetenango, Guatemala, situated at an elevation of 1,880 meters. The farm cultivates Red Bourbon and Caturra varieties, alongside 60-year-old Bourbon and Typica plants, under meticulously managed shade to ensure optimal light and ventilation. Ripe cherries are hand-picked and pulped on the same day, followed by a 40 to 48-hour fermentation. The beans are then washed with clean spring water in a 30-meter channel, allowing first-grade beans to be separated from by-products. Drying is conducted on patios for three days, followed by six to eight days on African drying beds inside a greenhouse until the moisture level reaches 11.5%. The result is a coffee with a comforting profile, featuring notes of red apple, syrup, and vanilla, suitable for both filter and espresso preparations
