As an engineer turned coffee grower, he purchased Fazenda Santa Clara in 1993, initiating a focus on quality coffee production recognized across the region. Paulo Afonso's meticulous planning and infrastructure investments, coupled with machine-assisted harvesting of mostly ripe cherries, ensure optimal fruit selection. Cherries skip the wet mill, preventing fermentation flavours, and are dried on paved patios to enhance sunlight exposure. With moisture content around 20%, beans undergo controlled drying in mechanical dryers, maintaining uniformity in moisture levels.
