Cherries are hand-sorted, fermented for 24 hours in stainless steel tanks, then washed using an eco-mill to reduce water waste, before soaking and slow drying for 20-30 days. This results in a cup with classic red berry notes, a lower acidity, and subtle floral and chocolate undertones
