Jindo Coffee - Honeycrisp Dress
COF-JD-0008Honeycrisp Dress has that bright florality of a ripe red apple peel with a vanilla sweetness. This Illubabor Forest variety is one of three varieties grown at Gesha Village, in the Dimma block at a minimum of 1966masl (~9°N). Illubabor Forest is a cultivar taken from the Illubabor Forest in Ethiopia, and has lots of promise for disease resilience and flavor profiles. This coffee has been put through a mechanical demucilager, then through a full wet fermentation, where it’s soaked for 12 to 36 hours and then channel-washed. The coffee was then shade-dried for two to three days until it reached 30 percent moisture content, then sun-dried on raised African beds for 12-19 days until it reached 11 percent moisture.
