The cherries undergo a 48-hour anaerobic fermentation in sealed plastic tanks, followed by an additional 18 hours in GrainPro bags to promote lactic acid production, before being washed and sun-dried to 10.5% moisture content. The cup offers a delicate and refined experience with notes of candied lemon, apricot, honey, and soft florals, evoking the elegance of high tea on a warm spring day.
