Big Apple is a co-fermented Pink Bourbon from Edwin Noreña in Huila, Colombia, grown at 1,750 meters. The process begins with a 2-hour water soak, followed by 72 hours of carbonic maceration to collect mossto, a juice inoculated with yeast, glucose, and amino acids. This mossto, infused with dehydrated green apples, is used during a 72-hour submerged fermentation, resulting in a vibrant cup with intense notes of green apple, green grapes, and cherry cola, offering a unique coffee experience

INCREDIBLE!

I have loved this coffee so so much. A co-ferment that leans more on the approachable side but with a very clear green apple note.
I've loved brewing this on Aeropress. A small cup goes a long way. I've been taking my time working through this bag of coffee but every cup is a delight.
Highly recommend!

Reminds me of DAK's Sudan Rume. Fruity notes, bright acidity, and clean aftertaste.

Be bold!

Love this unique coffee! A little acidity from the Apple, but it’s really clean and refreshing. Well balanced so the acidity is not overwhelming. If you love, trying experimental coffee, I would highly recommend.
