This coffee has a long sweet finish and a light body. Luis Eduardo meticulously picks the ripest cherries and ferments them in open tanks for 5-8 days before drying the parchment on raised beds for 10-12 days. Finca Las Cabaña, managed by Luis Eduardo Vargas and his daughter Katy Julieth Vargas, is located in San Carlos, Urrao, Antioquia, Colombia. The 6-hectare farm, at 2,000 m.a.s.l., has around 8,000 Chiroso variety coffee trees.
