Ghost Roaster - Berruecos Arboleda Community: Washed, Colombia (340g)
Berruecos means "place full of rocks", a name given to this area during the 17th century when the town acted as an obligatory waypoint for caravans traveling between Popayán and Pasto. This Berruecos blend consists of nine smallholder farms surrounding the town of Arboleda. This blend is our way of creating larger, more manageable lot sizes from some really outstanding farms in this area. The farmers here work very diligently to grow, harvest, and process their coffees in a way that highlights the terroir and the natural flavour complexities present in the coffee. Each farmer processes their coffees using a different washed method which is what makes this blend so unique and exciting. Some coffees undergo longer fermentation times, whereas others include an additional period of in-cherry fermentation before depulping. The wide variety of techniques used to process this blend has created a very sweet and complex flavour profile in the final cup.
